Fair Trade

Using fairly traded chocolate is very important to Chocolats Latour. The culture and harvest of Theobroma Cacao (the cacao tree) has had a dark side throughout history. To this day reports of slave labor and child slave labor from cocoa producing countries abound. We believe that a food as divine as chocolate should be good for everyone involved. Fair trade organizations ensure that no slave labor is used in the production of cocoa beans and that farmers are paid a fair wage.

In my chocolate I use chocolates from Equal Exchange, a wonderful company that works directly with farmers, and the only fair trade chocolate produced by the Callebaut Corporation. Callebautis a producer of high quality chocolate and I am proud to encourage them in their fair trade venture. I also use El Ray chocolate which is made in Venezuela, where they work directly with farmers coops.

Local Ingredients

I use as many local ingredients as we can find. This ensures freshness and reduces the pollution associated with transport of goods. Some ingredients are as local as my garden, where I am constantly increasing my supply of herbs. My “Eau De Vie Cerise” chocolate for exemple features tart cherries from my own cherry bushes. I Use  delicious Snowville Creamery Dairy products. Their Cream is thickest I have ever seen.

 I enjoy strolling to the Cincinnati Farmers Markets to find new ingredients and flavors to use in chocolate making. Following growers suggestions has lead to some of my favorite flavors, like Juniper. I always appreciate new suggestion of local food suppliers.

Earth friendly packaging

I use boxes made of recycled craft paper, cellophane bags are compostable so they will not sit land fill for year. I don’t use bulky plastic inserts so while my boxes might paper smaller then of some the national brands They are filled with more chocolate!
